Homemade Peach Cobbler

Ingredients

2 Packages of Pie Crust 

4 cans of Sliced Peaches (15 oz) 

1 cup of White Sugar 

1 cup of Brown Sugar

1 Tbsp. Vanilla Extract

1 tsp Ground Cinnamon

1 tsp Nutmeg

3 Tbsp Butter (Melted) 

1 Tbsp. Lemon Juice (optional) 

Instructions
  1. Open cans of sliced peaches and toss them into a pot
  2. Add white sugar with half of it (that's half a cup) just to keep it clump-free. Give a good mix, then add the rest.
  3. Time to do the same routine with the brown sugar half in first, then the other half. Mix it all up till its a party in the pot
  4. Sprinkle in your ground cinnamon and nutmeg-about a teaspoon each. But hey, you can adjust these to your liking. We want this cobbler to have that perfect blend of flavors.
  5. Pop your pot onto the stove, somewhere between medium and low heat. Let that peachy goodness simmer for about 15 - 20 minutes, stirring now and then.
  6. Once your filling is cooked, add your cornstarch slurry to the filling while it is hot to thicken your filling

Crust Action

  1. Grab our baking dish, it could be Pyrex or a trusty cobbler pan. Give it a good spritz with cooking spray-that's gonna keep your crust from sticking.
  2. Unroll the first pie crust and gently lay it into the pan, stretching it to cover as much as you can. Don't stress if it doesn't reach all the way. 
  3. Unroll the second pie crust and, guess what? Repeat the same move in Step 2
